Junk food seems to affect our ability to regulate appetite and thereby consumption, so that eating junk food makes it genuinely harder to resist eating more of the same. However, these diet-triggered impairments on appetite control and memory were reversed three weeks after returning to a healthy diet.
This study also suggests that improving our diet if it is poor may directly benefit our mental health through its effect on hippocampal function.
